Fermentation questions
-
Fermentation is a microbial transformation in which sugars are converted into acids, gases, and sometimes alcohol, transforming foods into a more preserved state and giving them complex, unique flavors. During this transformation, microbes proliferate and create a diverse community, in which your food is teeming with beneficial microorganisms.
-
Microbe-rich fermented foods and drinks offer a healthy alternative to the more widely available processed and preserved foods sold today. When you introduce beneficial bacteria to your body, you strengthen your gut, improve immunity, and better your digestive health. You also encourage a food culture that promotes diversity and health for your inner and outer ecosystems—all ecosystems needs a good balance of microbes to thrive.
-
Most commercial pickles are made with vinegar and then heat-processed.
Our vegetables are lacto-fermented, meaning the tang develops naturally over time. The result is a deeper flavor, brighter character, and a taste that can't be rushed.
-
Nope.
We leave our ferments unpasteurized, to capture the essence and unique flavors from fermentation. Because they’re living, it’s necessary to store your ferments in the fridge. It serves as a pause button for the fermentation process.
-
We think you will like our sauerkraut! We are in the business of converting folks and we’ve had a lot of success over the years.
Fermentation is a whole world, not a single flavor. Some are bright and crunchy, others are spicy, earthy, or savory.
You might be surprised by what finds its way onto your fork.
-
We start with exceptional ingredients, work closely with local farms whenever possible, and give every batch the time it needs.
No shortcuts. No rushing. Just thoughtful food made by people who care deeply about the craft.
